This Spinach and Eggs Puff Pastry Tart recipe makes for a fabulous weekend breakfast!
Spinach & Eggs Puff Pastry Tart
1 sheet of store-bought puff pastry, thawed according to package instructions
1 cup fresh spinach, washed and chopped
1 cup cherry tomatoes, halved
1 cup shredded cheese (e.g., cheddar, mozzarella, or gruyere)
4-6 slices of cooked bacon, crumbled
4 large eggs
2 tablespoons olive oil
Salt and pepper to taste
Optional: Fresh herbs like parsley or chives for garnish
1. Preheat the Oven: Preheat your oven to 375°F (190°C).
2. Prepare the Puff Pastry: Roll out the thawed puff pastry sheet on a lightly floured surface to fit a rectangular baking sheet. Transfer the pastry to the baking sheet. You can also fold over the edges slightly to create a raised border.
3. Prick the Pastry: Using a fork, gently prick the surface of the puff pastry all over. This will help prevent the pastry from puffing up too much while baking.
4. Layer the Ingredients: Brush the pastry surface with olive oil. Spread the chopped spinach evenly over the pastry, followed by the halved cherry tomatoes. Sprinkle the shredded cheese and crumbled bacon over the vegetables.
